As it runs today, it does not make a profit. We would rather say so here than on the day of a viewing. The sales, the fit-out, the name and the systems are the hard part, and they are done. The margin is the opportunity: an owner who runs it hands-on, and takes a fresh look at rent, staffing and the menu, has the most room to change the result.
